Prior to joining the School of Food Science in 2022, I spent 17 years in teaching, research, and academic leadership roles in Universities in Nigeria, Uganda, and Ghana.
The focus of my research has been on understanding the role of processing (primarily of phytochemicals) in contributing to more sustainable diets for better health.
Currently, I am investigating the safety, functionality, bioactivity, and processing of new aquatic plant-based food systems as sustainable sources of protein and phytochemicals in the human diet.
KTP in Nigeria
In 2023-24 I led on the Innovate UK-funded knowledge transfer partnership (KTP) with Agro Park Development Company Limited (APDCL), a farm-to-form business in Nigeria.
This collaboration which also included academic colleagues from the Ladoke Akintola University of Technology, Oyo State, Nigeria resulted in the development and commercialisation of a novel natural (plant-derived) edible biopolymer coating for preserving a variety of fresh plant produce as a sustainable and effective solution to improving agricultural productivity, reducing food loss, and value-addition along the supply chain.
